Vinification: meticulous hand-sorting of grapes first in the vineyard and then in the winery. Destemming and soft crushing of the grapes. Alcoholic fermentation is conducted by indigenous yeasts. Fulling is carried out frequently for optimal fermentation and extraction from the marc. Cold decanting of the wine by natural settling. Unfiltered

Aging: 12 months in Tonneaux, before spending 12 -18 months in bottle

Drinkability: Up to 10 years

Organoleptic examination: ruby red in color. Ample persistent aromas with vinous hints when young and then transforming with age into ripe plum and cherry, with spicy and vanilla notes characteristic of oak. Smooth palate with fine mouthfeel, savory with elegant, silky tannins.

Pairings: classic rich table food, both on first courses with red and dark sauces and with main courses of roasts, game and aged cheeses.
