Vinification: grapes from the four grape varieties are harvested and vinified separately. In red vinification, alcoholic fermentation is conducted by indigenous yeasts. After about 10 days of fermentation and 20 days of maceration, the pomace is drawn off and gently pressed. Then the wine is blended and kept at 21 °C to complete malolactic fermentation. It remains on the lees with weekly agitation (batonnage) until spring.
Aging/Aging in stainless steel vats for 10 months
Aging potential: 4 years
Organoleptic examination: bright and clear ruby red color. Intense, vinous bouquet with clear notes of ripe red fruits and hints typical of the vines. Pleasant and versatile drinkability. Savory, persistent and at the same time soft, with ripe and never aggressive tannins.
Pairings: with first courses that tend to be savory, traditional Tuscan cold cuts and roasted red and white meats. Also excellent with fresh and medium-aged cheeses
